Fluffy, Flavorful Cauliflower Rice

I am finally a convert to LOVING Cauliflower Rice😊. I hope this recipe will make you one too. Say Good Bye to Soggy, Watery, Cauliflower Rice—Say HELLO to Fluffy, Flavorful, Cauliflower Rice! The SECRET—->BAKE IT!

Ingredients:

1 pack of fresh or frozen Cauliflower rice, both work just fine

Chopped red onion or shallot –to taste

Fresh Herbs: Cilantro, Dill, Basil

Butter or olive oil to taste

Salt to taste

Directions:

Preheat oven to 350 degrees

Line a cookie sheet with aluminum foil or parchment paper (this is just for easy clean up)

Place riced cauliflower on the cookie sheet, lightly salt and place this in the oven for about 10-15 minutes. The time will depend on your oven, watch closely towards the end because can burn very quickly.

While the cauliflower is cooking in the oven, finely chop the onion or shallot and herbs—> do this to taste. I like onion so I do about 1/8 of a cup for one bag frozen cauliflower. Currently Im using Cilantro but use whatever herb you like. Place the herbs and onions in a bowl.

Add the cooked cauliflower to the onion/herb mixture, add butter or oil now, if you like. Mix well and enjoy!
