Low Carb Burrito/Taco Bowl

Make your own Burrito/Taco Bowl at home. Everything you would put in a burrito or taco (except the tortilla), all in one bowl! Use Cauliflower rice as the base and you choose what you would like in it.

Ingredients:

Fluffy cauliflower rice (see post from 8/13/22)

Protein of your choice: Cod, shrimp, chicken, beef…

Sliced avocado

Guacamole

Carrots

Onions

Radish

Peppers

Tomato

Cilantro

Black beans

Chipotle mayo–> see below

Chipotle Mayo:

½ C mayo, ¼ C sour cream, juice of ½ lime, 2-3 chipotle peppers–> place all in food processor and blend till smooth.

If you prefer not to use mayo, you can mix salsa and sour cream or yogurt, or simply just top with Salsa.

Directions:
Prepare protein to your preference–I like to season with cumin, garlic and salt. Grill air fry, pan fry or bake.

Prepare cauliflower rice. Chop vegetables

Assemble as creatively as you want, have fun with being creative:-)
