Red Cabbage Slaw

Finally, a new recipe! This is not your run of the mill Cole Slaw! This one is super tasty, fresh, healthy (low carb). It goes with any sandwich, burger, sausage, or works well on its own! I don’t have exact measurements for the ingredients, if you like more of something add more, if you don’t like an ingredient keep it out. Feel free to adjust to your taste:-)

Equipment:

Mandolin (not necessary but makes it much faster)

Large bowl

Ingredients:

One small Red Cabbage, cut in ¼’s, cut out the core

½ bag matchstick Carrots

½ red onion

1 large bunch cilantro

(I have also shredded Fennel Bulb for the salad, it is one of my favorites)

Dressing ingredients:

½ cup avocado oil

½ cup fresh lime juice

1-2 Serrano peppers, very finely chopped

1 tbsp ground cumin

2 cloves fresh garlic, finely chopped

1 tsp honey

Salt to taste

Using the mandolin shred the cabbage and onion. Be very careful NOT to cut your fingers on the Mandolin. If you do not have a Mandolin, you can cut the cabbage and onion thinly with a knife. Place the cabbage, onion, carrots, and cilantro in the bowl.

In a separate bowl mix the dressing ingredients. If you like a lot of spice use 2 Serrano peppers. If you prefer less acid in your salad, use more avocado oil. You can omit the honey if you are staying away from all sugars.
