
Green Shakshuka
This is a variation of the traditional tomato based shakshuka. Just as delicious, super nutritious. Serve it with a side of breakfast Ham and you can have “Green Eggs and Ham”.
Ingredients
4 tbsp olive oil or ghee
1 leek thinly sliced
1 small onion thinly sliced
2 cloves garlic finely chopped
1 bunch of swiss chard—large ribs removed and sliced into ribbons
Salt to taste
4-6 eggs
1 cup of crumbled feta cheese or any cheese you prefer
FOR THE PASTE:
1 bunch of Parsley-include the stems
1 bunch of Cilantro -include the stems
2 serrano chilies (seeds removed, but if you want some heat keep the seeds)
2 of the swiss chard leaves (smallest ones)
½ cup olive oil
1/3 cup water
½ tsp salt
Directions
Heat the oven to 375 degrees. In an oven safe pan heat the oil or ghee. Add the onions and leeks and cook until very soft. Add the garlic and salt. While the onions are cooking, make the paste. Place the oil, water, parsley, cilantro, peppers, 2 chard leaves, and salt in a blender and blend until you have a smooth paste. Once the onions are soft add the swiss chard leaves to the onions. When the swiss chard has started to wilt add the paste and mix to combine. Next create wells for the eggs with the back of a spoon. Gently crack the eggs and place eggs in the wells. Place the pan in the oven and bake the eggs until they have cooked about 7-10 minutes, watch the eggs closely not to overcook. Remove pan from the oven and sprinkle with feta cheese.
