Breakfast (or anytime) Calzone

This is such an easy breakfast treat, crispy and a great crunch! Use 2 ingredient dough and add the fillings of your choice. This Calzone reheats well if needed. You can change up the ingredients and have for lunch or dinner. Sure to be a hit with EVERYONE in your family.

Ingredients

Dough

¾ cup low moisture, part skim shredded mozzarella

1/3 cup fine almond flour

Filling

This is where you can experiment and create your own flavor profile. Im going to list some of my favorite fillings but the sky is the limit! Feel free to share your creation in the comments section.

Cooked Scrambled eggs (about 2 scrambled eggs fit into one dough recipe)

Breakfast sausage crumbles (cook prior to placing in Calzone)

Bacon (cook prior to placing in Calzone)

Ham (cook prior to placing in Calzone)

Chorizo (cook prior to placing in Calzone)

Italian sausage crumbles (cook prior to placing in Calzone)

Green or red peppers (cook prior to placing in Calzone)

Broccoli (cook prior to placing in Calzone)

Onions (cook prior to placing in Calzone)

Spinach (cook prior to placing in Calzone)

Canned artichoke hearts

Peperoni

Pesto sauce

Pizza sauce

Cheddar cheese

Gruyere cheese

Goat cheese

Feta cheese

Swiss cheese

Directions

1) Preheat your oven to 400 degrees F

2) Choose your Calzone filling, I recommend no more than 3-4 ingredients so you don’t over stuff the Calzone.

3) Prepare the dough: place the cheese in a microwave safe bowl, microwave on high for about 45 seconds to melt the cheese (you may need more or less time depending on your microwave). Add the almond flour to the melted cheese and mix with a fork until it comes together to what resembles a dough. It’s OK to use your hands once it starts to come together to finish the mixing.

4) Place the dough between two pieces of parchment paper and roll out in the shape of a rectangle, using a rolling pin.

5) Remove the top piece of parchment paper and place the dough still on the bottom piece of parchment paper on to a baking sheet.

6) Place your filling into the center of your dough.

7) Fold over the dough to seal the Calzone. First, fold over one of the long ends, then fold the 2 short ends and lastly, the other long end.

8) Put some vent holes on the top to release some steam (take a knife and put 3-4 slits in the dough).

9) Bake for 15-20 minutes or until crispy and browned.
