
This is a delicious treat, sure to satisfy that chocolate craving! Super simple to make. Makes a great gift as well.
Ingredients:
About 1-2 cups of Pecans or other nut of your choice. I would avoid cashews because they are pretty high in carbohydrates.
About 1 oz of dark chocolate. Use 72% or greater cacao
1 tsp of coconut oil
2 tbsp of finely shredded unsweetened coconut
Pinch of salt
Directions:
Place the pecans on a cookie sheet that has been lined with parchment paper.
Place the chocolate and coconut oil in a microwave safe bowl, place in the microwave and melt–>about 45 seconds, microwaves may vary. I would place in for 20 seconds, check on it and then add more time as needed for melting.
Pour the melted chocolate over the pecans and cover completely or if you prefer you can drizzle the chocolate. It is important to work quickly now before the chocolate hardens.
Sprinkle with the finely shredded coconut.
Sprinkle with a pinch of Salt.
I place in the fridge for 15-20 min for the chocolate to set. If summer store in the fridge.
Of course, if you do not like coconut you can omit the coconut. You can also chop the nuts and make clusters.
